Monday Night we had roasted chicken with tomatoes, mushrooms, onions, green onions, chicken, broccoli, carrots and potatoes.
Recipe
Mix Spices with olive oil (I used Fresh garlic, onion powder, and Mrs dash original)
Toss veggies in about a Tablespoon of olive oil mixture.
Roast veggies at 400 degrees for about 30 min (stir every 10-15 min)
While roasting veggies, Grill chicken
Toss chicken and veggies together and serve.
Ingredients: one serving
- Broccoli, fresh, 0.5 cup, chopped or diced
- Mushrooms, fresh, .25 cup, pieces or slices
- Potato, raw, 1 medium (2-1/4" to 3-1/4" dia.)
- Chicken Breast (cooked), no skin, roasted, 4 ounces
- Carrots, raw, .5 cup, chopped
- Onions, raw, .25 cup, chopped
