Wedding Cake

Sorry here is an unhealthy post! (I don't just cook healthy I love to bake!!)

I made this cake for a co-workers wedding that is on 6/21! I used a new technique called sugar veil to make the lace. It was an interesting experience!

The cake is a chocolate cake with peanut butter filling. 






Cupcakes are peanut butter chocolate and Cheesecake vanilla!

Our basket this week!

Basket for 6/20/2014
We received:
Fruit: Green grapes, bananas, Nectarines, Lemons, Grapefruit, pineapple
Veggies: Avocado, Roma Tomatoes, Lettuce, Celery, Acorn Squash, and Corn on the cob.

We still have a few things left from last week mostly the fruit, we are not used to eating that much fruit. Excited to find a good acorn squash recipe, I have never really cooked it.

If anyone has any recipes I should try let me know.

Chicken and zuchinni pasta

I used only about 1 oz whole wheat noodles and the rest was veggies. This greatly reduces the calories and carbs and tastes just as good. Even my husband liked it.

 Start Pasta

Prep veggies: I used 4 tomatoes, mushrooms, onions and a med zuchinni



Cut chicken in slices and start cooking in a little olive oil.

 Add tomatoes and spices, (I used an Italian spice mix)

 Add veggies:

 Cook til done. Add a little Parmesan or feta and serve!
This is very filling, plus tons of veggies!

(remember only one ounce actual pasta)

kale and steak!

My mom and dad raise purebred Dexter cows, so these are healthy lean steaks!

For the Kale I used Bobby Flays recipe, It turned out super good I just added onions to it. Served with a salad or another veggie. 

Kale recipe: 1Tbl olive oil, 2lbs kale, fresh garlic, and red wine vinegar.

Grandma's Enchilada's

These are a family tradition. They can be made healthier with turkey instead of hamburger. Make sure you use the healthy corn tortillas!

Brown burger in large pan.
Once brown add Chili pepper to tast (I add 2 TBL), Onion powder (about a tsp), I also add Chipolte and anchio chili powder to taste.
Pour in 2 cans Tomato sauce.
 Bring to a boil then turn down.

Cut an prepare: Spinach, green onions, shred cheese.

Cook eggs sunny side up! I eat 2 on mine

Take a corn tortilla, put it in the soup mixture cook for a min or so until soft.

take it out with a spatula and put it flat on a plate. (put another one in the soup to cook) Throw some of the spinach green onions and cheese on it. Then add the other corn tortilla, you can do 2 or three layers. when done add egg on top and eat! comment if you need more instructions! These are super yummy, you can use tons of spinach to make it super filling.

Roasted veggies and Chicken



Monday Night we had roasted chicken with tomatoes, mushrooms, onions, green onions, chicken, broccoli, carrots and potatoes.

Recipe
Mix Spices with olive oil (I used Fresh garlic, onion powder, and Mrs dash original)
Toss veggies in about a Tablespoon of olive oil mixture. 
Roast veggies at 400 degrees for about 30 min (stir every 10-15 min)

While roasting veggies, Grill chicken

Toss chicken and veggies together and serve.

New beginings

We are working on new beginnings this week in all the stress of buying a house and getting moved we have not been eating healthy. So we started working on it again this week. We actually did pretty good I will be documenting out dinners and what we are eating with our bountiful basket.

Here was our bountiful basket this week.
We got: 2 Lettuce Hearts, 3 Avocados, 6 Roma Tomatoes, 2 cucumbers, 2 zucchini, some small potatoes, Kale, Grapes, nectarines, oranges, blueberries and bananas.
